thought i'd share this recipe. makes mornings easy and thanks to my wonderful sister in law whom i love sooooo much and who is a great cook, i have it to share with you guys! she may have beat me to it, but here it is anyway
6 english muffins, split to make 12 halves (whole wheat is a good choice)
1 lb of turkey sausage or low fat pork sausage
1 jar bacon cheese (it's in the aisle with cheese spread, it's one of those processed cheese things)
1/3 cup shredded cheese
6 eggs
1 T milled flax seed (just for a bit of nutrition)
1/4 cup diced mushrooms and or olives - OPTIONAL!!! (i don't use, jen does :O)
so cook the sausage on med-high till cooked through. if using mushrooms or olives, add now to saute. add the six eggs to scramble in. remove from heat and add the rest of the ingredients. stir to combine well. lay 12 english muffin halves on cookie sheet. spoon sausage mixture on. freeze. when ready to use, bake at 400 for 12 minutes till cooked through and muffin is crunchy!
easy for mornings when things are a little busy!
