CHINESE CHICKEN SALAD
most of you probably have some type of recipe for this, but if you don't have a sweet one, here it is. rich begs for this. it's definately at the top of our favorites plus it's super easy and very healthy. perfect summer food.
-one head of savoy (chinese) cabbage finely chopped (look for a medium size)
-three green onions chopped up
-three medium boneless, skinless chicken breasts, cooked and DICED(you can just boil the meat w/some buillion till it's cooked through or for a little added flavor, grill it in a pan)
DRESSING:
-3/4 cup red wine vinegar
-3/4 cup sugar
-2T soy sauce
-1/4 cup oil (vegetable or canola...doesn't work too well w/olive)
Whisk in a bowl well to combine all ingredients & until sugar has dissolved.
CRUNCHY TOPPING:
-crush 1-2 bags of top ramen soup
-1 cup of slivered almonds
-2 T sesame seeds (optional)
-2 T butter
melt butter in skillet over med heat. add ramen, almonds, and sesame seeds. stir constantly till browned. remove from heat to cool.
combine cabbage, onions, chicken and crunchy topping in a large bowl. toss with dressing. serve immediately.
*** if you are not going to be eating the salad entirely, i advise pouring on the dressing and topping per individual serving. otherwise it will become soggy in a small amount of time.
