time for chillin & a little grillin



since the weather is hot and most of us will be spending our time outdoors enjoy the evening warmth, maybe cooling down with a nice cold beverage...i thought i'd post a bbq menu, recipes included. hope you get a chance to try it out.

summer vege's & fish bundles
4 fish fillets (recommend tilapia)
1 lb thinly sliced veges (mushrooms, zucchini, squash, tomatoes, asparagus)
1 envelope lipton recipe secrets savory herb w/garlic or golden onion soup mix
1/2 cup water

combine soup mix and water. place each fillet in foil. top with veges. evenly pour soup mixture over the four fillets. wrap foil loosely around fillets sealing edges airtight. grill seamside up for 15 mins or until fish flakes.

serve with corn grilled on the bbq. a little tip is to microwave it in the shuck for about 7 minutes (holds moisture and flavor in!). then throw it on the grill for 10 minutes to give it that bbq flavor. remove shuck & serve with one of the following
AVOCADO BUTTER: mash 1 sml ripe avocado seasoned w/chili powder, s & p, a pinch of cumin and a dash of lime juice
BACON BUTTER: beat 1/4 cup unsalted butter til creamy. beat in minced cooked bacon, pinch of red pepper flakes, minced chives, and black pepper to taste.
SUN-DRIED TOMATO BUTTER: beat 1/4 cup unsalted butter til creamy. beat in sun-dried toms, pinch of red pep flakes or ground red pep, and s & p to taste.
HERB BUTTER: beat 1/4 cup unsalted butter til creamy. beat in favorite minced herbs such as thyme, chives, oregano, parsley, etc.. and some s & p.

Pomegranate-Orange Juice
3 c pomegranate juice
2 c cranberry juice
2 c club soda
3/4 c orange juice
combine in pitcher. stir. chill. serve. aahhhh...so refreshing!


Blue - Pom dessert
1 c frozen raspberries with sugar, thawed
4 envelopes (about 4 T) unflavored gelatin
3 c pomegranate juice
1 c fresh blueberries

place raspberries in medium bowl. sprinkle with gelatin. in saucepan over med. heat, bring pom juice to a boil. pour boiling juice over raspberry-gelatin mixture. stir til dissolved. divide 1 c blueberries between a 4 cup mold. strain raspberry mixture through sieve over blueberries. refrigerate till set (3 hours). invert onto serving platter.
