meal planning

in response to mommyfirst-designer born, here is my recipe. rich and i tried these a couple of weeks ago and devoured them. very good, very easy, very quick. sounds like a perfect combination? it is. give them a try this week

makes 4 servings

2 C shredded cooked chicken (a pre-cooked rotisserie chicken makes it easy)
1 1/2 C (6 oz) shredded mexican cheese blend, divided
1/2 C hidden valley original ranch dressing (i advise getting the dried dressing package and preparing it according to directions. it makes for a much better tasting dressing and meal)
1/4 C sour cream
2 T canned diced green chiles, rinsed and drained
4 (9-10 inch) flour tortillas, warmed

mix together chicken, 3/4 C cheese, dressing, sour cream and green chilis in a medium bowl. divide evenly down center of each tortilla. roll up tortillas and place, seam side down, in a 9 in baking dish. top with remaining 3/4 C of cheese. i recommend combining sour cream, ranch dressing, and a little salsa to make a sauce to pour over the enchiladas. this is optional of course. then top w/cheese.
bake at 350 F for 20 minutes or until cheese is melted and lightly browned.

awesome--one more meal....planned. thanks. hopefully this will catch on. half the time, it's just coming up with different ideas....that are easy!

My Mom makes something similar --- LOVE IT! The only difference is a can of cream of chicken soup instead to Ranch. I will definitely be trying this variation! :) I will post a recipe soon! Great idea HOT POTATO!
