1 pkg rice a roni fried rice prepared according to instructions (ommit butter and just use cooking spray to brown rice/pasta)
1 (6oz) jar marinated artichoke hearts, quartered
1/2 cup mayo
1/2 green beel pepper, chopped
3-4 green onions, chopped (white and green parts)
12-14 pimiento stuffed green olives, sliced (optional. i don't use them)
1/2 C. slivered almonds
salt & pepper
1 lb small or medium shrimp, peeled and deveined (or sub cooked chicken breast cubed)
prepare rice a roni. drain artichoke hearts marinade into a medium bowl (save hearts). whisk marinade and mayo to combine. add artichoke hearts, green pepper, onions, and olives. s&p to taste. (recommendation: cook shrimp in small amount of salted water for 3-4 minutes till firm and cooked through)
add rice, shrimp (or chicken), and almonds to mixture and gently stir. this salad may be served hot or cold. great on it's own or with bbq burgers.
