a little something for you all

I decided to publish this cause i've told many people about this recipe and my sister-in-laws best friend wanted easy recipes to prepare for her family...so here it is. it is one of my family's favorites. great comfort food.

Turkey or chicken and rice casserole:

2 C cooked & cubed turkey or chicken (your choice)
3 C cooked rich
2 T minced/dried onion
1 1/2 C frozen peas
one can campells cheddar soup
one can evaporated milk
3 C crushed cheese crackers (your choice)
3 T melted butter

pre-heat oven to 350. layer rice in bottom of 9x13 pan. sprinkly onion over rice. layer peas over to desired amount. spread turkey over evenly. in a seperate bowl, mix soup and milk w/wisk. pour evenly over ingredients. combine butter and crackers till coated. sprinkle over ingredients. bake uncovered for 35 minutes.

This is the one that I have mastered since I've been married. It was one of my favorite dishes that my mom made and I love it. It's so easy and so good. Way to spread the word about good food! :) Have a happy three day weekend!
