i just might start my own cooking show

well, i ain't no paula dean but i sure felt like it this weekend. i can tell you i have a new found appreciation for a woman who's savvy in the kitchen! i've always loved to cook, but never found much time for it until i had my baby and decided to stay at home. now, i cook and bake quite a bit. (although rich might say not enough :o) this last friday my friend Lauren and i took on cooking for close to 250 people at our church's "married life live" dinner. it was pretty funny that even the guys at costco were surprised at the amount of food we bought. as lauren said, if THEY are surprised, you are buying a lot!! preparing it was crazy, hectic, and a little insane, but it turned out great thanks to my friends Skye, Lory Lynn, Amanda, Jen, and Rox. THANK YOU sooo much for stepping up. it's nice to know i can count on you girls to save my butt :o) ALSO a special thanks to my good friend Lori for giving me direction and guidance. i would not have known what the heck i was doing if not for her. she's the expert as many of you know.
THEN to top it all off, i spent all day Sunday cooking three different kinds of meals to feed 6 families. it was in preparation for a "meal exchange" i was involved in. so that was another 6-7 hours of cooking. it was fun and worth it when we all met up last night to exchange meals. i ended up w/18 great dinners, all different menu items...and 4 dozen cookies. i think i have moved from beginner to intermediate cook in one weekend's time. BUT now i get to relax, no planning, just open the freezer, choose a meal, dethaw, and heat up. isn't that such a great idea? totally worth ever minute of slaving in the kitchen.

I hope you enjoy the meal exchange as much as our family has- it makes you look like supermom. Always a hot dinner on the table just in time for the hubby, with no dirty dishes in the sink, and no sweat on your brow!

Sounds like you were one busy Momma! I don't like to cook, but it is hard to cook for one. I do like to bake though. Have a fab afternoon!
